The Dietary Guidelines for Americans recommend getting at least half of your grains from whole grain sources. What about the “other half” of the grain recommendation? Most refined grain staple foods are enriched with vitamins and minerals that both kids and adults need. In fact, it’s mandatory in the U.S. that all refined wheat flour is fortified with folic acid as part of a public health effort to reduce neural tube defects, which can occur in very early pregnancy – often before a woman even knows she’s pregnant. Since the folic acid fortification took effect, there has been a dramatic drop in cases of neural tube defects. A healthy diet should include a mix of whole and refined grains. Even indulgent #grainfoods such as cakes and cookies can fit in healthy eating patterns as treats for special occasions, like during the holiday season, and simple moments of joy! #sponsored @grainfoodsfoundation Many of you may not know, but I am a first generation American and my background stems from a variety of countries and cultures. My family immigrated from Romania, Czechoslovakia, Russia, and Poland. I have been fed different foods from these various cultures—and love celebrating each one! One dish that I learned to make in my late 20s is Chicken Plov, which is an Uzbekistani dish my children’s father wanted our kids to enjoy. It’s also a dish that is enjoyed within the Russian culture, from my father’s side of the family. I revamped the recipe to make it healthier by using chicken breasts, but you can also use skinless, boneless chicken thighs. The recipe features carrots, onions, and basmati rice which can’t be “disturbed” at the top of all the ingredients while the dish is cooking. This version uses enriched basmati rice, which is a grain packed with important nutrients. It’s also a dish that showcases how all grains can be a vehicle to incorporating other nutritious foods (like veggies and protein here!). Grain foods, in all their forms, are nutrition powerhouses, and my kids grew up enjoying the benefits of this meal. We’re geeking out on grains! Especially when they’re vital to help our bodies kick off the day on the right foot.
