This option allows customers to make a refundable deposit for the reusable and to drop off their reusable to be sanitized and used again. If your restaurant is located near other restaurants, such as a college campus, airport, or mall, encourage other restaurants to create a reusable program with you, where diners can drop off their reusables at any restaurant before leaving the location. We strive to have all our Certified Green Restaurants® implement a composting program. Composting is required for certification in the following cities: Baltimore, Boston, Cleveland, Washington DC, NYC, Philadelphia, Portland OR, San Diego, San Francisco, Seattle, and St. Louis. With the average restaurant producing 100,000 pounds of garbage every year, implementing a comprehensive composting program can reduce the annual garbage output by up to 50% per year. According to the Natural Resources Defense Council, food waste adds up, resulting in US restaurants collectively producing 22 to 33 billion pounds of food waste every year. Through composting and recycling, restaurants can divert 90% of their waste from landfills. This decreases an individual restaurant’s waste ending up in a landfill by 90,000 pounds every year. If every US restaurant followed these steps, the restaurant industry would prevent 20 to 30 billion pounds of food waste from reaching landfills annually. Certified Green Restaurant® Spotlight: 3 Star Certified Green Restaurant® Bella Sera, located in Pittsburgh, has implemented a pre-consumer and post-consumer composting program. Provide customers with reusable containers through a deposit system and incentivize the use of the containers with a discount or reward. Certified Green Restaurant® Spotlight: 4 Star Certified Green Restaurant® Chauncey’s Choice at Coastal Carolina University in South Carolina offers students access to to-go containers that students may use and return the next time they are at the dining hall. The dining hall also offers a reusable mug program from which students can purchase a school tumbler for less than $10 and refill for free or bring their own bottle and fill it up at any dining hall for $1.
