Growing regenerative regional food systems using the power of food processing.

About us

The labor of cooking is preventing regional, regenerative food systems from growing. Most regional, regenerative foods are sold whole and raw, but most food purchased by both consumers and institutions is processed or prepared. Consumers and institutions can't afford to take on the additional labor of processing and preparing whole and raw foods. Regenerative regional growers (including small to midsize and BIPOC owned/operated farms) can’t offer consumers and institutions competitive substitutes for conventional processed options. When these growers can't compete, regenerative regional food systems can't scale. No one has built a systemic solution to this problem until now. Marcellus Foods is a new kind of food processor making it possible for everyone to eat great meals every day. We source exceptional ingredients from regional suppliers and process them into preps: freshly cooked whole foods that reduce labor in any kitchen. Our holistic approach to food system change is designed to catalyze meaningful growth for regenerative regional food systems. At Marcellus Foods we: Build and support regional value chains Develop and implement culinary training Reinvest in systems, infrastructure and people to operate efficiently Our vision for Marcellus Foods was born out of decades spent working in grocery stores, restaurants and other professional kitchens and a lifelong passion for great food.     I met Danielle Schwab through a colleague / mutual friend in 2020 when we had both thrown ourselves head first into trying to support farmers through the chaos that Covid unleashed in local and regional supply chains.
