It accumulates in predatory fish like swordfish and tuna, posing significant exposure risks. 🚨 According to the World Health Organization, mercury is among the ten chemical compounds of greatest global public health concern. 🚨 Recent revelations by the BLOOM Association about mercury contamination in canned tuna have captured public and media attention. To address this, the EU Commission Regulation 2023/915 sets the maximum mercury content for highly contaminated fish like tuna, swordfish, marlin, halibut, and red mullet at 1 mg/kg. 🌶 #Phytochemicals in Spices & Herbs 🌿 Phytochemicals such as piperine (found in black pepper), capsaicinoids (in chili peppers), estragole (in basil, tarragon, fennel, and anise), methyleugenol (in basil, nutmeg, cinnamon, and clove), as well as safranal, crocin, and picrocrocin (in saffron), are bioactive compounds present in spices and herbs. ✅ Piperine and capsaicinoids are generally recognized as safe in the EU and USA, often serving as quality indicators. Piperine adds the kick to black pepper, while capsaicin is responsible for the heat in chili peppers. Saffron, on the other hand, is graded based on its unique compounds like safranal and crocin. ❗ However, compounds like estragole and methyleugenol are subject to strict regulatory limits due to concerns over potential carcinogenicity.
