Avocado & Chickpea Sandwich 2 cups cooked or canned chickpeas, smashed (If using canned chickpeas, boil it for 6-8 minutes until its texture gets soft but not mushy) 1 large avocado, chopped ¼ cup chopped, onion 2 teaspoon garlic powder 1 tablespoon lemon juice salt, pepper, crushed red chili pepper to taste 6-8 pieces toast 1. In a large bowl, add cooked chickpeas and use a fork to smash it. Add chopped avocado, onions, garlic powder, salt, pepper, and lemon juice and combine them together. 2. Scoop it over the toast and sprinkle crushed red pepper. 3. Serve immediately. Or prep everything except the avocado and wait to add it until ready to serve.
