This was so good - squash and whipped feta on waffles. At The Waffle House in St Albans, the entire menu revolves around waffles… and this place is busy throughout the year, every day regardless of the season or weather, despite the fact the carpark is too small and there’s parking restrictions, regardless of most of the seating being outside and you have to queue on most visits because they don’t take bookings. Because what they do, they do really well and are consistent. They have a core menu that doesn’t change and they supplement it with specials (like this one) and quite frankly, they can’t go wrong. All of the compromises are worth it because of the quality and consistency. There’s been talk recently about focusing on core amenities in shared living and how a ‘light’ version could be developed. It’s like this - make the thing you do, be the thing you’re known for and make it really, really good. Don’t follow trends or try and keep up with the competitors. You, do you. As a brand, it’s really hard to be that focused and to not let external factors influence you. It’s hard not to see others try things and think you should keep up especially when they appear to be ‘winning’. I’m a huge believer in the slow and steady approach, by building a brand based on strong foundations that allow people to settle in with you, to learn to trust your service and product without diluting it all the time. Actually that’s a lie about The Waffle House, they did introduce dairy and gluten free waffles a few years ago 🎉 (small adaptations to creative more inclusivity is the exception!) #brand #marketing #marketingmessage
