What do hiring and cooking have in common? Mise en place is a French culinary phrase which means "putting in place" or "gather". It refers to the setup required before cooking, and is often used in professional kitchens to refer to organizing and arranging the ingredients. I often take examples from other professions and apply them to hiring principals. PREPARATION is as crucial in hiring as ALIGNMENT is to the successful outcome. It's the mise en place of hiring, if you will. In order to run a great hiring process, you need to make sure you understand the business problem you're solving. You need to know the ideal profile, how you'll run the process and what steps you'll take to ensure success. The same thing happens in a restaurant: the ingredients, where are they sourced, how do they make it there, what goes into the dishes, for how long, when, and what's the presentation, the outcome, the review? If you let your mise-en-place run down, get dirty and disorganized, you'll quickly find yourself spinning in place and calling for backup. - Anthony Bourdain In hiring, the same applies. Here’s how I see it: The Meat (Main Role): The centerpiece of the meal, just like the key role you're recruiting for. It’s the foundation of everything else, and without it, the dinner wouldn't be complete. Choose wisely! The Veggies (Supporting Roles): Essential sides that bring balance to the plate. Just like team members, they complement and enhance the main role, ensuring the whole organization functions beautifully. The Gravy (Company Culture): The glue that holds everything together. Companies want to hire good people. Have you asked yourself why the company is hiring? It's great that you saw a job posting and that they have an open position, but have you asked why this position exists? Companies hire to solve problems both internally to make the company more efficient and profitable, and externally to solve the problems of their customers, making their business more profitable. If the company is looking to hire a fry cook and you, a recently laid-off executive chef, could you do this job? Absolutely! Probably better than any fry cook they would hire. Are you overqualified? What does that even mean? Being overqualified isn't the issue. The issue is that they need someone who can make fries. If you were used to scheduling, ordering, coordinating manpower, ensuring the overall standards of your restaurant, managing P&L, working with suppliers and vendors, and ensuring the general success of the kitchen, the concern isn't that you're not going to be able to make fries. The concern is that you're not going to be interested in making fries, you're not going to be happy making fries, and you're going to take the job and then quickly look to progress to other areas of responsibility or leave when a better position at another restaurant comes up. This creates two potentially perceived problems for the company: 1) Once again they'd need to hire someone to make fries. 2) They'd have to find a different position for you in the organization, potentially displacing someone else and causing issues or questioning the leadership of the current head chef etc. The wheels of doubt spin from previous similar situations where they've been burned. Does this mean the restaurant or the person hiring is wrong for assuming you're overqualified? No. It's on you, the applicant, to help them see why they should hire you. Maybe you're done with all the stressful jobs and just want to work at the fry station. Maybe you've made more than enough money in your career and don't really need to work, but you just love being in the kitchen and want to be a resource in the best way you can. If this truly is a job you want and not just one that you need because you've been laid off, help the company see how hiring you solves one problem and doesn't create others. Companies want to hire great people, and it's harder than ever for them to do it. As an agency, we make it easier for them. What is the biggest challenge in the F&B industry? is it the #customers? is it the #innovation? NO!! it's the #hiring! Yes, hiring staff remains the most challenging aspect in the F&B industry. Attracting candidates from a bigger brand is a distant option as they prefer a high salary and established processes. When a staff changes in an outlet, it has a very significant impact over customer service, food preparation & everything that the person is involved in because the new person cannot replicate the same work in a months training.
