What do hiring and cooking have in common? Mise en place is a French culinary phrase which means "putting in place" or "gather". It refers to the setup required before cooking, and is often used in professional kitchens to refer to organizing and arranging the ingredients. I often take examples from other professions and apply them to hiring principals. PREPARATION is as crucial in hiring as ALIGNMENT is to the successful outcome. It's the mise en place of hiring, if you will. In order to run a great hiring process, you need to make sure you understand the business problem you're solving. You need to know the ideal profile, how you'll run the process and what steps you'll take to ensure success. The same thing happens in a restaurant: the ingredients, where are they sourced, how do they make it there, what goes into the dishes, for how long, when, and what's the presentation, the outcome, the review? If you let your mise-en-place run down, get dirty and disorganized, you'll quickly find yourself spinning in place and calling for backup. - Anthony Bourdain In hiring, the same applies. "𝗛𝗼𝘄 𝗡𝗼𝘁 𝘁𝗼 𝗛𝗶𝗿𝗲 𝗮 𝗖𝗵𝗲𝗳: 𝗔 𝗥𝗲𝗰𝗶𝗽𝗲 𝗳𝗼𝗿 𝗥𝗲𝗰𝗿𝘂𝗶𝘁𝗺𝗲𝗻𝘁 𝗖𝗵𝗮𝗼𝘀" Once upon a time, a multi-cuisine restaurant wanted to hire a chef who could whip up delectable Italian dishes. The restaurant manager called a recruitment agency, proclaiming, "We need an Italian chef!" The agency asked, “Great! Any specific Italian dishes the chef should excel at? Any extra duties? Will the chef handle prep work too? What experience level are you looking for?” The manager casually waved it off, “Oh, just the usual tasks, and someone with 5-6 years of experience.” The agency, understandably confused, asked, “What exactly do you mean by ‘usual tasks?” The manager responded cryptically, “It depends on the tasks and duties.” Undeterred, the agency pressed, “Alright, what's the budget?” The manager nonchalantly replied, “Oh, we haven’t the faintest idea.” With barely any direction, the agency deployed their best recruiters who scoured the culinary world and finally found two exceptional chefs. They presented their details, complete with salary expectations. The manager looked at the proposals, gasped dramatically, and declared, “This is way too expensive! I recently turned to LinkedIn to hire, and wow — it worked! The experience was insightful, and here’s what surprised me during chef interviews: 1️⃣ Premix & artificial ingredients dependency: Many chefs can’t bake vegetarian goods without premixes & additives. It made me question—are we even eating real food anymore? (Chefs from ITC, Taj, Marriotts, etc.) 2️⃣ Accommodation Expectations: Stay and food are standard asks in this industry. It’s fascinating how salaries don’t seem to cover these basics, or the industry has just made this a norm! 3️⃣ Recipe Sharing: What I thought were “sacred secrets” are surprisingly easy for chefs to share. 4️⃣ Team Dynamics: Introducing higher pay scales can ruffle feathers internally—a delicate balance to manage. Top 5 #Restaurant Job Ad FAILS 1. Not providing your restaurant's name, address, logo, or any identifying information - who wants to know where they are applying to, anyway? 2. Listing every job task in detail, ensuring that job seekers know that servers take food orders and bartenders make drinks. 3. Leaving out wage/salary info. It's the experience that job seekers are after, not the compensation (buying food = overrated). 4. Keeping the benefits of working with you a secret. People love surprises! 5. Requiring a master's and/or PhD plus 10+ years of experience for your host role to avoid those annoying unqualified applicants. Have you seen any of these mistakes in job descriptions? Unfortunately, copy that includes any of the above is all-too-common and it results in frustrated job seekers, wasted hiring budgets and, ultimately, awful job ad performance. Recruitment is a lot like preparing a roast dinner. 🍽️ Every ingredient needs to be carefully selected and perfectly timed for everything to come together seamlessly. Here’s how I see it: The Meat (Main Role): The centerpiece of the meal, just like the key role you're recruiting for. It’s the foundation of everything else, and without it, the dinner wouldn't be complete. Choose wisely! The Veggies (Supporting Roles): Essential sides that bring balance to the plate. Just like team members, they complement and enhance the main role, ensuring the whole organization functions beautifully. The Gravy (Company Culture): The glue that holds everything together. Without a good culture, things can seem dry and disconnected. A little goes a long way, but it’s a vital part of the overall experience. The Roast Potatoes (Benefits & Perks): Everyone’s favorite! It’s what candidates often look forward to when considering an offer—crispy, satisfying, and worth staying for. The Timing (Hiring Process): Get it wrong, and things are either undercooked or burnt out.
