#IFT was my first food industry trade show after joining MarketPlace Branding over a decade ago—I found food science fascinating then and continue to be captivated by those who manifest solutions for taste, sustainability, sensory experience, and nutrition. At the time, I worked with ingredient and technology brands who: 🧈 Displaced partially hydrogenated oils (PHOs) 🐔 Provided single-source alternatives to whey and soy proteins while delivering a PDCAAS of 1.0 🧪 Showcased breakthrough microalgae ingredients 🥖 Displaced less-than-desirable dough conditioners 🧂 Offered taste-making sodium and sugar reduction solutions While many of those solutions are now fully in-market, the food industry insiders I know never pass up an opportunity to improve. Today, innovation is more often centered around themes like regenerative ag, upcycled ingredients, and better-for-you options that taste better, too—sugar and sodium reduction still make the list. And, of course, trending flavors and functional ingredients are always evolving.
