After being picked, fruits and vegetables are still alive, undergoing complex physiological changes to stay fresh. Understanding these changes is key to extending shelf life and preserving quality! 𝐊𝐞𝐲 𝐂𝐨𝐧𝐜𝐞𝐩𝐭𝐬 𝐢𝐧 𝐏𝐨𝐬𝐭𝐡𝐚𝐫𝐯𝐞𝐬𝐭 𝐏𝐡𝐲𝐬𝐢𝐨𝐥𝐨𝐠𝐲: 𝐓𝐢𝐦𝐢𝐧𝐠 𝐨𝐟 𝐇𝐚𝐫𝐯𝐞𝐬𝐭: Harvesting at the right maturity stage is crucial. Picking fruits too early or too late affects their taste, texture, and longevity, which in turn influences their quality during storage. 𝐑𝐞𝐬𝐩𝐢𝐫𝐚𝐭𝐢𝐨𝐧 𝐚𝐧𝐝 𝐄𝐧𝐞𝐫𝐠𝐲: Just like us, fresh produce needs energy to maintain cellular health. They break down stored sugars, releasing CO₂ and water. This process can lead to flavor loss over time as organic acids are depleted. 𝐄𝐭𝐡𝐲𝐥𝐞𝐧𝐞 – 𝐓𝐡𝐞 𝐑𝐢𝐩𝐞𝐧𝐢𝐧𝐠 𝐇𝐨𝐫𝐦𝐨𝐧𝐞: Some fruits, like bananas and tomatoes (climacteric fruits), keep ripening after harvest due to ethylene. Controlling ethylene levels is crucial to managing ripening. Techniques like applying ethylene inhibitors (e.g., 1-MCP) can delay ripening, extending shelf life and reducing food waste. 𝐌𝐨𝐢𝐬𝐭𝐮𝐫𝐞 𝐋𝐨𝐬𝐬 𝐚𝐧𝐝 𝐓𝐞𝐱𝐭𝐮𝐫𝐞: Water makes up 80-90% of produce weight, and this can cause fruits to shrivel and lose firmness. Keeping the right humidity levels is essential to balance freshness and prevent fungal growth. By carefully managing storage conditions like temperature, humidity, and ethylene exposure we can slow down these natural processes, extending shelf life and helping to tackle postharvest losses. 𝐂𝐮𝐫𝐢𝐨𝐮𝐬 𝐚𝐛𝐨𝐮𝐭 𝐭𝐡𝐞 𝐩𝐨𝐬𝐭𝐡𝐚𝐫𝐯𝐞𝐬𝐭 𝐜𝐡𝐚𝐥𝐥𝐞𝐧𝐠𝐞𝐬?
