As someone who works in the wine industry, especially on the "education" side of wine, I often get questions about wine-related concepts, topics, and misgivings. I particularly enjoy questions from beginners, those who have no experience in wine but are excited to learn nonetheless. It feels rewarding to share my passion with them and see a slight spark in their eyes as they finally understand the majesty and intricacy of wine. Pét-Nat, short for Pétillant Naturel, is a type of sparkling wine made using the méthode ancestrale, the oldest known method of producing sparkling wine. Unlike traditional methods, where the wine undergoes a second fermentation in the bottle with added sugar and yeast, Pét-Nat is bottled before the initial fermentation is complete. This method allows the fermentation to finish in the bottle, naturally creating carbonation. Pét-Nat has gained popularity for its natural winemaking approach and the unique, often unpredictable flavors it offers.
🍾✨ We had an amazing visit to Uncharted Wine | Holmancellars in Napa and learned from the talented winemaker Jason Holman how he crafts his incredible Pét-Nats. Here’s the inside scoop: 1. Pick the juice straight from the vineyard 🍇 2. Ferment it down until it’s almost dry 🍷 3. Chill it to 28 degrees to slow down the yeast ❄️ 4. Cold settle even during active fermentation 🧊 5. Bottle it and ground cap it, even though it looks chunky and foggy at this stage 🫧 6. Let it warm back up so the yeast reanimates and continues to consume sugar, creating natural carbonation 🍾✨ The result? A beautifully carbonated Pét-Nat with all the flavors and bubbles you love!
