Are you also stuck in the past? I have been in the food industry for the last 15 years, nearly half my lifetime—okay, I'm lying, a bit more than half my lifetime. I have learned that innovation, forward thinking, and disrupting the status quo are things that few are interested in. Especially the baking industry, which has shocked me the past year. I would say they are stuck in the past and closed to change and development. That being said, there are some visionaries in the industry. For instance, Hanna Sinivuori Schaldemose, which I managed to convince to visit Agrain by Circular Food Technology's facilities for a workshop. Yesterday, we had her and her colleagues from Coop i Danmark in, where we showed them how we process spent grains and how they can innovate in their bakeries without compromising taste, texture, and cost. Luckily, my bias is proved wrong by some innovative and visionary minds, but they are still few.
