Restaurants have pinched a lot of ideas from pubs, but what have pubs learnt from them? We’ve all been to a lovely pub for a bite to eat, should I get the average curry, or the average pie whilst your pal has the spectacular fish special. So why do we try to cast the net so wide? When I launched my specialist sausage and mash offer I was met with incredulous locals… “Who wants to eat bangers and mash every day of the week” But what they didn’t know is this was no ordinary bangers and mash menu. Ten flavours of locally sourced banger, ten choices of buttery mash and five gorgeous gravies and it took off. I mean really took off, we became the destination for the best bangers and mash in town and word spread to even further afield. We even made it into Esquire magazine with a rave write up by a famous restaurant reviewer. It was never my expectation that people would eat in my pub everyday, although some gave it their best shot but I wanted to stand out, to do something different and to have a specialist product that I could genuinely shout about as ‘The best around’. Most successful food brands specialise in a certain cuisine, be it Indian street food, pizza or BBQ. You know where to go for a particular feast to get your taste buds firing. So going back to my example of the average food in the pub, why not be the fish pub, the seafood pub, catch of the day, fresh from the boat. Shout about it because by specialising you can hone your skills and genuinely be the place to go; quickly becoming your USP. #USP #thegreatbritishpub #lifeofservice #pubmentor #hospitality #pubs

New research by VisitScotland reveals growing visitor demand for Scotland’s food and drink experiences. Findings showed that 46% visitors took part in at least one food and drink activity (in addition to eating out) during their trip last year, with 19% of long-haul visitors naming food and drink as the reason for choosing Scotland to visit. Visiting a whisky, gin distillery or brewery (26%) was the most popular type of food and drink activity followed by farm shop or farmers market (22%), fine dining (14%) or other experience such as a cookery class or afternoon tea (9%). Experiencing locally produced food and drink was important to all visitors, especially those from the USA (51%) who make up Scotland’s largest international visitor market. Rosé in the restaurant business Although in Europe 15% of consumtion is rosé, look on your winelist. On the average winkelinterieur of 50-100 references, 2-5 are rosé. That should be at least 5-10. More styles of rosé will increase your turnover if/because : - rosé- foodparing gives a lot of possibilities (also Eastern disrespect and sushi) - ask a your winesuppliers for possiblities - taste with you staff - good margins - education of staff by importers - introducing a table/house rosé - on the high end a special cuve (Provence?) at € 50-100 - rosé is hot in summier but ALSO in winter because of the foodparing possibilities - rosé target 20% of turnover from mai-september. 10% octobre to april If you want general advise on your winelist, mail it to andre@wijnconsultancy.nl
