Try my recipe for stuffed #butternutsquash with a soya mince filling. It's #vegan, easy to make and oh-so-satisfying. Here is a brief overview of the recipe: #️⃣ 1. Prep and bake the squash: Preheat your oven to 180°C. Halve the squash lengthways, remove seeds, and brush with olive oil, salt, pepper, and cumin. Bake face down on a lined sheet for 25 minutes. #️⃣ 2. Prepare the filling: Rehydrate soya mince with vegetable stock and boiling water. Sauté onion, garlic, and black cumin seeds in olive oil. Add oregano, smoked paprika, tomato sauce, and rehydrated soya mince. Simmer for 15 minutes. #️⃣ 3. Stuff and bake again: Flip the baked squash halves, fill with the soya mince mixture, and bake for an additional 15 minutes until bubbly. #️⃣ 4. Beef stew with buckwheat(gluten free in spite of the name)and purple cabbage, sprouts on top. The recipe is my own, that I make up as I go along. 1 red onion 1 whole bulb of garlic 1kg beef stew (grassfed) Half to 1liter bonebroth or as much as it covers the meat 2 tablespoon of fat or oil-I used beef fat Add bay leaf(3), cayenne pepper1teaspoon, , salt,cumin 1 tspoon to taste Satay onion, add broth, meat, spices and simmer it for 40 mins or until meat gets soft. Stir regularly. Serve with buckwheat or rice. I also served it with purple cabbage - high in glutathione among other nutrients, and radish sprouts, which I grew. My simple keto/carnivore/low carb breakfast is here. Egg bites are great for a quick on the go option that’s packed with healthy fats and protein! They will keep you satisfied and your brain super charged. Unlike Starbucks I do not use seed oils EVER. Which makes these healthier and they are more cost effective lasting up to 2 months in the freezer! Here’s how you’ll make them: -Start with boiling water -Preheat the oven to 300 degrees -Move the bottom rack to the lowest rung and one rack to the middle -In a mixing bowl you will mix 6 eggs, 1 1/4 cup cottage cheese, 1 1/4 cup shredded cheese (any kind), 1/4 tsp salt. -Blend the mixture -Heat another pan and cook meat you’d like to use (bacon and beef work best) cook all the way through. -Butter your muffin tins for the egg mix -Pour egg mix into the pans with a little room for expansion -Add meat to the top -Cook for 20-25 min or until the egg mix pulls away from the tin sides -Let it cool for 5 min -Serve fresh or store in the fridge for up to 3 days, freezer for up to 2 months ☺️ Let me know if you try this recipe!
