Distinctive Italian Wines The wine you see in the middle of this table is Lunaria Sparkling Pinot Grigio Pet Nat Ancestrale. If you've never tasted a sparkling pinot grigio made in what is called the "ancestral method," you are missing out on a complex and convivial experience for your palate. This winemaking method uses very cold temperatures to pause the fermentation process for several months before completing the process in the bottle. It's thought to be the oldest sparkling winemaking method. And this wine is certified organic and vegan. Outstanding! However, choosing Christmas wines doesn’t have to feel like a high-stakes game of Master Sommelier.
