Coffee processing generates large amounts of effluents with high concentrations of organic matter, suspended solids, and chemical substances like tannins, phenolics, and alkaloids. This effluent is highly acidic with a pH as low as 3.5. It has a high Biological Oxygen Demand (BOD) and Chemical Oxygen Demand (COD), as well as high Total Suspended Solids (TSS). Discharging this effluent without treating it leads to high oxygen depletion in water bodies, eutrophication, and chemical contamination affecting aquatic life and human health. Using vetiver infiltration pits is an emerging technique with huge potential that overcomes the pitfalls of sedimentation ponds while still being very affordable for producers. In a recent interview, Mārtiņš Lācis, the member of borad of Latvijas Finieris, shared his thoughts on the most important industry issues in Europe and worldwide. “One of the industry’s main concerns is the regulation and limitation of various chemicals used in the industry, such as formaldehyde emissions. Formaldehyde is a compound used in industrial resins, adhesives, and coatings in engineered wood production. To protect human health, its usage regulations have been changed, and manufacturers are committed to adhering to these new regulations; a transition period has been set. Discussions are also ongoing at the European level about limiting melamine use. Rubisco, a lovely enzyme in green leaves making fresh air for you, by fixing C from CO2 to O2. Surprisingly, it is the most abundant protein on earth, just because it constitutes 50% of the total soluble protein in plant leaves, and plants are everywhere. We are lucky.They are edible and nutritious. So we food scientists of course want to utilize this protein for food production. It is a novel protein having the potential to replace animal proteins for sustainable food production. In the last one year, as a side project of my PhD, me and my colleague Xingfa Ma investigated the mechanisms by which Rubisco stabilizes foam and emulsions. We used ultrafiltration and pH shifting methods to extract Rubisco from spinach, generating native and denatured Rubisco with both high protein purity (79-91%) and solubility (92-96%). The native Rubisco with more flexible molecular stucture could better stabilize air-water interface and foam. The denatured one with stiffer reassembled molecular structure could better stabilize oil-water interface and emulsions. New article from my lab: "An Improved pH-Driven Method for Upcycling Polyphenols from Plants or Byproducts into Foods" 🥜🍃 We developed an improved post-pH-driven (PPD) method to encapsulate pH-sensitive quercetin into nanoemulsions with an encapsulation efficiency exceeding 95%!
