🍋 Mediterranean Baked Fish with Tomatoes & Olives 🐟 Looking for a light, flavorful dish that’s easy to make? Try this Mediterranean Baked Fish bursting with the vibrant flavors of tomatoes, olives, and fresh herbs! It's a healthy, delicious meal that pairs perfectly with couscous, quinoa, or some crusty bread to soak up all that tasty sauce. 😋 Ingredients: 4 fish filets (cod, tilapia, or sea bass), 170g (6 oz) each 2 tbsp olive oil 1 onion, finely chopped 3 cloves garlic, minced 1 can (400g/14 oz) diced tomatoes 1/2 cup (85g/3 oz) Kalamata olives, pitted & halved 1/4 cup (30g/1 oz) capers, drained 1 tsp dried oregano 1/2 tsp dried basil Salt & pepper to taste Fresh parsley, chopped, for garnish Lemon wedges for serving Instructions: Preheat oven to 190°C (375°F). In a large ovenproof skillet, heat olive oil over medium heat. Sauté chopped onion for 3-4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant. Stir in diced tomatoes (with juices), olives, capers, oregano, basil, salt, and pepper. Simmer for 5-7 minutes to meld flavors. Place fish filets on top of the tomato mixture, spooning some sauce over the fish. Transfer skillet to the oven and bake for 15-20 minutes until the fish flakes easily with a fork. Hello friends family and acquaintances today is NATIONAL GAZPACHO DAY - December 6! National Gazpacho Day, on December 6th, recognizes a flavorful soup that cooks serve cold. This typically tomato-based vegetable soup originated in the southern Spanish region of Andalucia. Gazpacho is widely consumed in Spanish cuisine, usually during the summer months. The original Spanish recipe includes stale bread, water, vinegar, oil and salt. Other ingredients include olive oil, wine, vinegar, water, and salt. Following is the typical method of preparing gazpacho: Washing vegetables Peeling tomatoes, garlic, and onions. Chop all vegetables (traditionally pounded with mortar) and process in a food processor. Add the soaked bread. Blend part of the processed contents until liquid, depending on desired consistency. Blend in chilled water, olive oil, vinegar, and salt to taste. Add remaining processed ingredients. Garnish as desired. Gazpacho offers cooks many modern variations. Abundant fresh fruits, vegetables, and herbs make a delicious gazpacho, too. Consider using ingredients such as avocados, cucumbers, parsley, watermelon, or grapes. However, recipes offer meat stock and seafood varieties for gazpacho, too. Don't hesitate to try something new. If the grocery offers something fresh on special, look for a recipe that will get you experimenting. You won't regret trying something fresh, especially in the fall or winter. Sharing one of my favorite salad recipes with you. This Mango and Avocado Salad is a refreshing, crunchy, and satisfying meal that's perfect for any occasion. Enjoy! Ingredients: - Mixed greens (lettuce, arugula, red amaranth) - Kale (or baby spinach) - Sea salt - Olive oil - Avocados, sliced - Mango, diced - 3 tbsp cooked quinoa - Pomegranate seeds - Half a finely chopped chili or jalapeño (adjust to taste) - Toasted cashews with chili powder for crunch For the dressing: - Olive oil - Honey - Lemon juice (or orange juice) - Salt and pepper to taste Method: - Wash and thoroughly dry the mixed greens and kale (or spinach). Tear kale into bite-sized pieces, discarding tough stems. - Whisk together olive oil, honey, lemon juice (or orange juice), salt, and pepper in a small bowl. Adjust the sweetness and acidity to taste. - In a large bowl, combine the mixed greens, kale, sliced avocados, diced mango, cooked quinoa, pomegranate seeds, and finely chopped chili or jalapeño. - Drizzle the dressing over the salad ingredients and toss gently to coat evenly. - Sprinkle the toasted cashews (tossed with chili powder) on top just before serving. Recipe. Tofu Scramble with Ginger Ideal for Lazy Days Are you hungry and don't feel like cooking? There are simple, hearty and delicious recipes ideal for these moments. That's the case with this peanut and ginger scrambled tofu recipe recommended on EatingWell. Ingredients: 5 tablespoons of water 3 tablespoons smooth natural peanut butter 1 1/2 tablespoons rice vinegar 1 tablespoon low-sodium soy sauce 1 tablespoon chopped fresh ginger 2 teaspoons of honey 3 medium garlic cloves, chopped 390 g firm tofu 2 teaspoons extra virgin olive oil 1/2 teaspoon salt 4 spring onions cut into slices 1 medium avocado cut into slices 2 tablespoons fresh coriander leaves Preparation method: 1- First, in a small bowl, mix the water, peanut butter, vinegar, soy sauce, ginger, honey and garlic until you obtain a homogeneous mixture. 2- Drain the tofu and dry it with absorbent paper. Cut the tofu into eight pieces. Crush them into irregular pieces. 3- Meanwhile, heat the olive oil in a large non-stick frying pan over medium/high heat. Place the tofu in the frying pan in just one layer and season with salt. Cook, without stirring, for about five minutes. Carefully turn the pieces over. Cook, stirring occasionally, for seven minutes. Add the chives. Cook, stirring constantly, for another two minutes. Remove from heat. These tacos are not only wholesome and tasty but also filling and nutritious. ⌛ Preparation Time: 40–45 mins 🍽 Serves: 1 🥗 Ingredients: Fish fillet- 80 gram Lime juice- 1 teaspoon Chili powder- 1/2 teaspoon Paprika- 1/2 teaspoon Cumin powder- 1/2 teaspoon Olive oil- 1 teaspoon Salt- as per taste Black pepper- as per taste Corn tortillas/ Phulka- 2 pieces Avocado (diced)- 1/4 cup For the filling Hung curd- 1/4 cup Lime juice- 1 teaspoon Coriander leaves (chopped)- 1 tablespoon Cabbage (shredded)- 1/4 cup Corn (boiled)- 1/4 cup ✋ Method 1. First, in a bowl, whisk together olive oil, lime juice, paprika, chili powder, cumin and mix well. Add fish to this and toss well until they are evenly coated. Let the fish marinate for 15 minutes. 2. Prepare the filling by combining hung curd, lime juice, coriander, corn in a bowl. Then, add cabbage, corn and season with salt and pepper. Keep this aside. 3. Next, heat some oil in a large nonstick skillet over medium-high heat. Then add the marinated fish and cook until it is well done. Then flake the fish into small pieces with a fork. To assemble the tacos 1. Warm up the tortillas/ phulkas. Place them on a dish and add the flaked fish pieces, hung curd mixture and top them with diced avocado. Finally, add some lime juice on top and fold it into a taco. 2. Fish taco is ready. Enjoy! :)

Here's how to make it: Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 2 cups Ingredients: - 2-3 habanero peppers - 1/2 ripe pineapple - 1/2 onion - 1 cup water - 2/3 cup white vinegar - Juice of 1 lime - 8 slices of peeled ginger (about 1/2 inch piece) - 2 tsp sugar - 1 1/4 tsp salt - 1/4 tsp dried marjoram - 1/8 tsp ground cumin Instructions: 1. Prep Ingredients: - Slice the pineapple, habanero peppers, ginger, and onion. For a milder sauce, remove the seeds and pith from the habaneros. 2. Simmer: - In a pan, add the pineapple, onion, habaneros, and ginger with 1 cup of water. Simmer until the mixture is somewhat submerged and the ingredients have softened, about 2-3 minutes. 3. Add Seasonings: - Add salt and sugar to the pan. Continue to simmer gently until the onions and peppers are softened, about 5-10 minutes. 4. Blend: - Transfer the simmered mixture to a blender. Add the vinegar, lime juice, marjoram, and cumin. Blend until smooth. Allow to cool. 5. Season: - Taste the sauce and adjust the seasoning with additional salt or sugar if needed. 6. Cook the pasta according to package instructions. 2. In a food processor, pulse together walnuts, mushrooms, onion, sun-dried tomatoes, coconut aminos, and your favorite Italian seasoning until finely chopped. 3. In a pan, sauté the walnut mixture until fragrant and slightly browned. 4. While sautéing, use the same food processor to blend the tomatoes into a sauce. 5. Buy a can of Sun Bell from the Sun Bell range of tuna flakes and keep a Fijian employed! Make delicious tuna melt toastie using PAFCO Sun Bell tuna flakes. Refer below for a quick and easy recipe; Ingredients; 1 can PAFCO Sun Bell tuna flakes drained 2 slices sourdough bread 1 tablespoon salted butter, soft enough to spread 1 tablespoon whole egg mayonnaise 1/2 teaspoon Dijon mustard 1-2 tablespoons red onion, finely chopped Freshly cracked black pepper, to taste Zest of 1 small lemon Small handful fresh parsley and chives, finely chopped Small handful of grated sharp cheddar cheese Method: In a small bowl, combine tuna, mayo, Dijon mustard, red onion, herbs, lemon zest, and black pepper. Mash with a fork until well mixed. Spread softened butter on one side of each slice of sourdough bread, then turn them over, so the butter is on the outside. Now spread the tuna mixture evenly onto one slice of bread, covering to the edges. Sprinkle the grated cheddar cheese onto the other slice of bread. Carefully place the two slices of bread together to form a sandwich. Heat a small frying pan over medium heat. Once hot, place the sandwich in the pan, buttered side down. Cook until the bottom is golden brown and crispy. Flip the sandwich and cook until the other side is golden brown and the cheese is melted. Remove from the pan and let it cool slightly.
