Through sourcing ingredients from local vendors, using more sustainable production processes, and encouraging waste reduction in both students and food preparers, Lehigh's Rathbone Dining Hall has become the only university in Pennsylvania, and one of only 14 universities in the country, to receive a four-star certification from the Green Restaurant Association. “To have a university who really cares about sustainability in their dining operations is amazing." Ghost Kitchens are impacting University Life‼️ 💡Imagine a kitchen that exists solely to prepare food for delivery or pickup, with no dining area, no wait staff, and no physical interaction with customers. 💡This is the ghost kitchen: a culinary concept focused entirely on serving the campus community through digital orders. 💡Far from the traditional campus eateries, these kitchens operate behind the scenes, efficiently catering to the diverse tastes and dietary needs of students and staff. The Value They Bring‼️ Ghost kitchens are not just a novel concept; they’re a strategic response to the evolving demands of campus life: ✅Diversity in Dining: They offer an array of culinary options, from comfort food to international dishes, all from a single operation point. ✅Convenience and Efficiency: For students cramming for exams or faculty between classes, these kitchens provide quick and easy access to food without the need to visit a dining hall. ✅Health and Safety: By reducing the need for crowded dining spaces, ghost kitchens offer a safer alternative for eating, crucial during health crises. ✅Culinary Innovation: With the flexibility to change menus and test new concepts, ghost kitchens can quickly adapt to trends and preferences, keeping campus dining exciting and varied. #universitycatering #cateringconsultant #cateringprocurement

Students can buy these reusable containers using meal points, dining dollars, cash or card at the dining halls. Currently, more than 1,400 boxes have already been purchased. Given that single-use containers cost 50 cents each time, the reusable option is a more cost-effective solution for students who frequently opt for take-out. #sustainableUH
