Our conversation continues with Beverage Director Emily Nevin-Giannini on her thoughts about Dry January. Q: Are cocktails without alcohol still cocktails? A: They can be, but they have to be approached as cocktails & not just mixed juice as some “mocktails” often are. An NA cocktail can be just as complex, nuanced, and thoughtfully crafted as those with alcohol, but they have to be designed intentionally to balance the elements that are absent. Take our Tea Time, for example. We use concentrated Earl Grey tea for its tannic depth to balance the tangy blueberry shrub, and we add aquafaba to give it some body. Together, these elements create the complexity, structure, and depth you’d expect from a spirit-forward cocktail. (Aquafaba is the liquid from chickpeas—vegan and sustainable since it repurposes an ingredient that might otherwise be wasted.) #barcelonawinebar #alcoholfree #dryjanuary
