Recently I ate at the best restaurant in the world. Well, 15th best, but we’re splitting hairs. The Chicago restaurant is Alinea. 30 minutes into the evening, I realized something odd - the food was easily pushing 9/10 on taste, But it wasn’t the best best. Which highlights the main point. Alinea is a 3-michelin star restaurant because of the unique experience. We were served black truffles exploding with liquid elixir, strawberries that were a savory something-else, and dessert reminiscent of a Jackson Pollock painting. An unforgettable delight. Grant Achatz's magic is his uniqueness. His work is an act of self-expression. He doesn't follow the traditional tired cultured cuisine. Personal power is self-expression. The two concepts are indivisible in human psychology. You can’t have personal power if you don’t express yourself. And self-expression comes from the inside-out. Today if you want to be both happy and successful, be the best at being you. Don’t try to fit in, don’t try to be different. Stop looking to the outside world for a reference point. What’s left is you observing the world inside yourself. And that’s how you become one of the top restaurants (businesses, artists, lovers, leaders) in the world.

Rasmus Munk, chef of the eighth-best restaurant in the world, Alchemist, in Copenhagen, pipes a mousse of lamb brains and foie gras into a bleached lamb skull, then garnishes it with ants and roasted mealworms. Another of the 50 or so courses — the restaurant calls them “impressions”— lurks inside the cavity of a realistic, life-size model of a man’s head with the top of the cranium removed. ... ... But the list is dominated by places that normal people can’t get into, where the few diners who will go to almost any length for reservations will go home feeling bloated and drunk. They are not restaurants, or not just restaurants. They are endurance tests, theatrical spectacles, monuments to ego and — the two most frightening words in dining — “immersive experiences.” ... ... One well-traveled diner told me about a recent, four-hour meal at Disfrutar, in Barcelona — No. 1 this year. He said he was “blown away” and at the same time he never wants to go back. “It was an assault, and not fun,” he said. ... ... Whether the World’s 50 Best seeks out these spectacular spectaculars or has simply been hijacked by them is impossible to tell.
