So last week I have finished my 4 week online NPD internship at #SpaceFoodClub, an accredited online internship provider based in India, in which we elaborated over all the steps of new product development of food products in which at the end, my team and myself worked on an NPD presentation on dehydrated lactose free banana-papaya milkshakes. New product Development comprises of 7 stages (though other sources have slight differences from one-another, the underlying concepts are still the same) which include: 1. Idea generation: You may get ideas from internal teams (for example, the marketing team) or you could ideas influenced from content seen online. 2. Market research: Now you want to validate the idea by doing research, who would the product appeal to? Why would it appeal? Is it feasible for your company? And so on… 3. Planning: Research is now translating into action in which you think about ingredient compositions (also considering factors such as ingredient interactions, unit operations, potential allergens, fortification, and food regulations from governing bodies such as the EU and FSSAI) as well as packaging composition. 4. Prototype: Using your planning you make your prototype, also considering factors such as personal health and safety, HACCP, equipment use and staffing. 5. Testing: Test your prototypes with sensory panels to assess sensory profiles, microbiological testing and shelf life testing, allergen testing, physiochemical testing to calculate nutritional value, contaminants, and food quality. Also assess the feasibility and effectiveness of packaging. Change prototypes based on feedback and optimise them where needed. 6. New Product Development (bulk processing): Once a prototype is deemed as optimal, now is the stage where it’s bulk produced, followed with the packaging and labelling used. Consider factors such as the unit operations involved, equipment use, staffing, health and safety, HACCP, etc. 7. 𝙈𝙮 𝙡𝙚𝙖𝙧𝙣𝙞𝙣𝙜 𝙚𝙭𝙥𝙚𝙧𝙞𝙚𝙣𝙘𝙚 During my internship, I was assigned to the microbiology lab to learn about food safety testing. One of the tasks I was given involved using an autoclave, a machine that sterilizes equipment using high heat and pressure. I was instructed to open the autoclave after the sterilization cycle was complete. However, due to my lack of experience, I made a mistake. I attempted to open the lid without first turning off the machine and the main power supply. This could have been extremely dangerous as the autoclave was still under pressure and could have exploded. Thankfully, the autoclave had safety features in place that prevented me from opening it. My senior quickly realized what had happened and guided me through the correct procedure. I learned a valuable lesson about the importance of following safety protocols, even when I'm unfamiliar with a task.
