These methods were crucial for extending the shelf life of food and making it safer to consume. The industrial revolution marked a significant turning point, with the advent of canning, pasteurization, and refrigeration, transforming food production and storage. Louis Pasteur's development of pasteurization in the 19th century, for instance, was a groundbreaking advancement that drastically reduced the incidence of foodborne illnesses. ### Modern Food Processing Techniques Today's food technology encompasses a wide range of sophisticated processing techniques: 1. **Thermal Processing**: Methods like pasteurization and sterilization use heat to destroy pathogens and extend shelf life. These techniques are essential for dairy products, canned foods, and beverages. 2. **Non-Thermal Processing**: Techniques such as high-pressure processing (HPP), pulsed electric fields (PEF), and ultrasonic processing preserve food by inactivating microorganisms without the use of high temperatures, thereby retaining more of the food's nutrients and sensory qualities. 3. **Fermentation**: This ancient technique has seen modern advancements and is used to produce a variety of foods, including yogurt, beer, and soy sauce.
