Hot micro perforation has been developed by us around the 70s, after many years already working with micro perforation solution units, machinery and components. Both plates are grass fed beef, both plates are cube rolls. But one plate has been cryovac’d (vacuum sealed) for up to 4 weeks, and the other was freshly cut from the carcass and sold immediately. Can you guess which is which? And more importantly - does it matter? I ask because I hear a lot from consumers that they don’t want to eat ‘old’ meat, which I guess if you’re doing it purely on packing date, yes cryovac’d meat is ‘old’, but that it’s a bit of chemistry going on inside that plastic - vacuum sealing removes air from the packaging, which significantly slows down the oxidation process, and oxidation is what causes meat to spoil and go all funky. By minimising exposure to oxygen, vacuum-sealed beef can safely last much longer. And look, vacuum sealing is generally better because it extends the shelf life and maintains the quality of the beef, meaning less wastage which is great for the planet and profit margins, and it also allows butchers to plan their stock better.
