Before 1980, the food industry operated under the mistaken assumption that asking people what made them happy to eat would lead to the creation of universally appealing dishes. However, this approach disregarded the complexity of individual preferences. As the saying goes, "The mind knows not what the tongue wants." Often, people cannot articulate their deepest desires when it comes to food. Consequently, the industry persistently offered what could be considered a platonic ideal of a dish to consumers. The prevailing goal was to discover the perfect dish that would satisfy every palate. However, this paradigm shifted when it became apparent that each consumer is unique, possessing their own distinct tastes. There is no one-size-fits-all solution in the realm of food. For instance, Howard Moskowitz's analysis of tomato sauce consumers for Campbell Soup Company's Prego brand revealed that the notion of a perfect tomato sauce is illusory. Instead, consumers should be segmented into clusters based on their diverse preferences. Some prefer spicy tomato sauce, others enjoy extra-chunky varieties, while some opt for a plain sauce without additives. This realization prompted a significant shift in the industry's approach. Rather than producing a singular type of sauce, manufacturers began offering a variety of options to cater to different tastes. Jackfruit! That was my challenge this week in doing something that pushes me outside my comfort zone. I wanted to challenge myself to try a food I'd never tried before. I chose jackfruit because I've seen this meat substitute mentioned quite a bit recently and I was interested to know what it tasted like and whether it was as big a deal as it's made out to be. It can be easy to stay eating the same old stuff that we're used to and not venture into the world of the culinary unknown. It's easy to think of food in terms of black and white - I like this, I don't like this - and then let that not only dictate our menu choices but define who we are. With the concept of these weekly challenges of stepping outside my comfort zone, this week's challenge aims to explore my thinking around food and open myself up to something new and a new experience. Bottom line is - you don't know if you don't try. Because how do you know you're not going to like something if you haven't tried it? How do you know you'll have a bad experience if you haven't tried something before? This is what I mean by little steps outside your comfort zone to raise awareness of what your inner chatter is telling you and how it might be holding you back or keeping you stuck. The world is your oyster (see what I did there 🤦♀️) and on the other side of your comfort zone is possibility.
