RESTAURANT OWNERS, HERE’S A SIMPLE TOOL TO HELP YOU CONTROL INVENTORY Restaurant owners you're going to want to listen to this for a simple tool to implement to help you control inventory and your food cost. What is it? It's called the key item tracker, and it's a simple clipboard system. You pick five items every week - two or three of your most expensive inventory items, and two or three of those inventory items you're just curious about what levels are and how to control the purchasing. It's a simple system where you start every day by counting those five items – your beginning inventory - you keep track of what's prepped or purchased that day so you have a total available inventory – then enter what was sold from your point-of-sale system, that should give you your end of the day inventory. If there's a discrepancy you better be able to find that on the waste tracker. Why is it important? Well, it just lets your team know that you're paying attention you're and running your restaurant like a professional. It helps them stay accountable in keeping track of those key items and gets them used to being aware of an inventory system. Now we've developed a Google sheet that allows you to take those daily counts and archive them to history, so you can start to study that history and understand inventory flow. Especially on your more expensive items, understand where your par value should be and how to order more efficiently.
