AOAC INTERNATIONAL strives to advance collaborative efforts to ensure food safety and quality. The Midwest section of AOAC is excited to highlight two Academia leaders making positive impacts in the Dairy segment. Dr. Matthias Hess from the University of California–Davis and Dr. Nicole Martin from Cornell University will share their research at the dairy segment of the conference. Dr. Hess is involved in research on the use of probiotics to enhance milk production and, most recently, has been pursuing environmental topics on climate change. Dr. Hess is currently working on using feed additives to adjust the gut microbiome to reduce methane emissions in dairy cattle. This technology has proven successful and is currently being funded for further advancement. Dr. Martin is involved in research on data analytics in dairy production and uses data to determine milk quality from individual farms through processing to final products. These tools can assist manufacturers in determining how milk sources should most effectively be used for finished products based on quality and predicted shelf life. This is the next tool for Dairy that will provide effective decision-making for manufacturers.
