Let's talk about ribbon pasta! What's the difference in between tagliolini, tagliatelle and pappardelle? The only difference is the width of the pasta. However Pappardelle and Tagliatelle originate in two separate regions of Italy, (Tuscany and Emilia Romagna) so they are eaten with different sauces. Bear in mind that regional dishes in Italy can vary substantially from town to town even with just a 20 mile distance. In any case there are 4 types of fresh, long, egg pasta types: Tagliolini 2mm width Tagliatelle 6–8mm width Pappardelle 20–30mm width As the width grows, the sauces tend to become heavier so, for example, Tagliolini are often eaten with seafood or fish sauces whereas Pappardelle are often eaten with game sauces or ragù.
