The right raisin is crucial! We source our raisins from carefully selected growing areas where the seedless grapes are dried under optimal conditions. The grapes are air-dried for 8-10 days, collected and then cleaned. Drying usually takes place on harvested grain fields, if possible on a hill where there is a lot of wind. To ensure that only the best raisins end up in our stollen, all deliveries undergo a strict quarantine process. Only after thorough analyses, such as tests for ochratoxin and pesticides, are they allowed to be processed. Our in-house analysis guarantees complete proof of the food conformity of the raw materials. News channels are reporting that there's a two-week delay in the British strawberry season due to cold weather and a lack of sunlight over winter. "Cold, wet weather and reduced sunlight hours this spring means that Britain's strawberry crop will arrive later this year." said a spokesperson from the British Berry Growers, the industry association that represents 95% of all UK commercial soft fruit growers. This is something the food and beverage industry are increasingly concerned about. Capacity constraints (license to produce) remain the main barrier to growth in the Salmon Farming Industry. 🐟📈 Investments in new technology are notable, as productivity has stagnated. This also includes investments in landbased facilities. The Norwegian tax regime now further limits farmer's ability to invest in new technology such as post-smolt (not deductible). Metals like lead naturally occur in the environment, such as in soil and in water. Pollution from human activity adds to metals being present in the environment too. As a result, metal residues can occur in food. Contamination can happen during food processing and storage.
