Insects play an essential role in nature, far beyond pollination, honey production, or silk production by silkworms. They also contribute to forest cleaning by breaking down carcasses. There is increasing discussion about Insects as Food and Feed, considered a sustainable alternative to traditional sources. The mealworm is at the forefront of insects that can be consumed and farmed on a large scale. After my work on protein production, my colleagues, who have extensive experience in valorizing waste from this insect farming, have developed protocols for extracting chitin and chitosan, achieving high quantities and quality.
