It's not just about letting your wine sit, it’s about guiding it through a process that refines and perfects. Here’s the science behind it: -Malolactic Fermentation: This is the conversion of sharp malic acid into softer lactic acid, which gives your wine a smoother, rounder mouthfeel. It’s essential for creating those rich, buttery flavors in wines like Chardonnay. -Acidity Management: This stage allows you to balance the wine’s acidity, creating a more harmonious and approachable taste. -Stabilization: Secondary fermentation also helps stabilize your wine, reducing the risk of unwanted re-fermentation in the bottle.
