Kevin’s Natural Foods used to be known as “Chef’s Menu,” but the company faced a challenge connecting with consumers. Why? The product launched as a meal kit offering restaurant-quality food, however customers found that cooking the meals was cumbersome. The recipes didn’t feel noteworthy for the premium price and effort. It came across as an expensive alternative to frozen entrees. So, the founders went back to the drawing board. They focused on what people were really craving: convenient, healthy, flavorful food. What they also did was talk to consumers to understand their unmet needs, and determine where the value lied: ease, health, ingredients...? The product soon became Kevin's Natural Foods, focusing on ready-to-eat meals emphasizing convenience. It's a diverse line of food suited for people on all kinds of diets. Following the rebrand, the founders built a campaign around the idea of “hacking health,” positioning their product as something that enables consumers to eat better. I like this messaging a lot! It translates as healthy but tasty…. The result? Kevin’s Natural Foods is now ubiquitous - available in 6,000+ stores nationwide. In 2020, the company saw a 460% revenue increase, and by the end of 2021, Kevin's reached approximately $100 million in annual revenue. This brand pivot shows that success isn’t always about the initial idea, but how you lean into demand and adjust your strategy to suit customer needs. It underscores the importance of knowing your audience and being agile enough to adapt. The shift transformed Kevin’s Natural Foods into a Category leader.

Foods and flavors will be more globally inspired (especially street food and third-culture), spicier, umami-rich, multi-sensory, colorful, playful and increasingly influenced by pop culture, TikTok and AI. Expect greater attention to Asian, Middle Eastern and African cuisines, along with the spices, condiments, sauces and snacks that are the typical entry points to the discovery of new cuisines. The convergence of the Food as Medicine movement and the climate crisis is driving greater interest in plant-forward eating, including heritage diets and cultural foodways. While taste remains the top driver of food choices, consumers are increasingly influenced by health. Protein content, freshness and minimally processed are among the top motivators. Health is also behind the growing popularity of non-alcoholic or zero-proof beverages. Even during times of economic stress, consumers are seeking elevated food experiences.
