I found this article to highlight some of the reasons why wine sales are decreasing. The consumer wants "unique and creative" yet the service teams responsible for guiding these conversations are seeing increasing turnover rates and industry tenure. I bet we'd see more unique lists as well as younger guest adoption if they could guide themselves both on and off premise. Unlocking flavor of a beverage was specifically called out. However, not many casual restaurants, or especially grocery have the space to list the flavor profiles of a wine, beer, spirit or cocktail. Then we have the paradox of choice to deal with as well. Thanks to solutions like Preferabli we have been able to put these flavors and the exciting products which match them, in the hands of the consumer, to deliver both a great recommendation, and the elusive "discovery" of something new and exciting. Glad to see WINE MARKET COUNCIL share this insight.

We aren't educating palates with wine; we are giving cocktails preferential deference because they are 'crafted.' What is more complex than the growing, vinification, and maturation process? Additionally, we have to be thinking about educating palates. Getting people to talk about what they are tasting and making wine an interactive experience. It isn't enough that tamarind syrup, candied sage, and ginger, mixed with more sugar, mixed with (below) average spirit. At the end of the day, we're masking a natural taste with sugars and acid. Let's bring people's palates into awakened status. Let's provide something of value, not just blackberries or cranberries. But for the sake of restaurants, create a conversation that excites by making a menu that speaks. Make it interesting. Make it unique. A rediscovery of taste and smell are afoot; but pandering to corporate interest and bulk sugar drinks aren't creating loyal followers. It reminds me of IPA. How many variations of creamsicle IPA's can be made before people are simply not interested anymore? Wine has an opportunity to be exciting again. Let's get it to the front of a menu.
