And also about knowing the yield of each ingredient Start with accurate yield calculations. Every ingredient has a raw cost, but what matters is the usable yield. For example, if you buy 10 kg of chicken, but only 7 kg is usable after trimming, your cost per kg increases. Understanding this helps you price dishes correctly. Standardize portion sizes. Use consistent portioning tools to ensure the exact same amount of ingredients. Over-serving increases food cost. But under-serving affects customer satisfaction. Monitor your production yield closely. Batch cooking and prepping large quantities are common, but if your team isn’t following the correct procedures, the yield drops. This results in more ingredients being used than necessary. Being creative with wastage can generate more revenue with less cost Trim waste carefully. Vegetable scraps, meat trimmings—these can often be repurposed. Use them for stocks, soups, or sauces, reducing waste and maximizing yield. Regular yield tests are crucial. Weigh your ingredients before and after preparation to determine real yield percentages. This gives you accurate data to control costs more effectively.
