A huge part of specialty coffee is the push for “perfection”. Whether it’s optimising extraction yields or enhancing desirable attributes, we’re constantly pursuing higher and higher quality standards. There are a myriad of ways to do this, ranging from using advanced distribution techniques for espresso to varying levels of agitation when brewing filter coffee. But a common theme among these practices is that they tend to focus on what happens before and during extraction. At the 2024 World Barista Championship, however, runner-up Jack Simpson showcased an entirely new concept: “post-extraction improvement”. Essentially, Jack used electromagnetic wave technology to reduce bitterness and highlight sweetness in espresso – characteristics that certainly help competitors receive higher scores. Specialty coffee shops are fertile ground for innovation in the wider sector, but we’re unlikely to see this type of technology used in them anytime soon. As someone who owns a coffee shop and works as a barista, I want to discuss 4 often-overlooked factors that can impact the taste and quality of coffee. ☕ Coffee grind freshness and size It's widely accepted among coffee enthusiasts that coffee loses its flavor within 30 minutes of being ground. Therefore, it's best to grind your coffee just before brewing to ensure maximum flavor extraction. The consistency and size of the grind can significantly affect the taste of your coffee, so it's important to be precise when using your grinder. If the grind is too coarse, your coffee will be weak, while a too-fine grind can lead to bitterness from over-extraction. 💧 Water quality The quality of water used in brewing is often underestimated but is crucial. Hard water can hinder proper bonding with coffee particles and may cause limescale buildup in your coffee maker. Many coffee aficionados prefer using bottled spring water or carbon-filtered tap water to avoid these issues. 🔥Temperature Water temperature is another critical factor; water that's too hot can extract undesirable compounds, resulting in bitterness. The recommended brewing temperature is typically between 195°F-205°F/ 90.5°C-96°C, with a sweet spot around 94°C/201°F. It's advisable to consume freshly brewed coffee within 30 minutes for optimal freshness and flavor. Avoid letting brewed coffee sit for extended periods. 💫Brewing equipment cleanliness Maintaining clean brewing equipment is essential. Regularly clean storage containers and grinders to remove oil buildup, and periodically run a vinegar solution through your coffee machine to eliminate limescale buildup. Coffee professionals and enthusiasts alike are always keen to try new brewers, accessories, and gadgets. AeroPress recently released its long-awaited Premium brewer: a handmade glass and stainless steel model that will be sure to resonate with specialty coffee consumers. As it stands, however, competitors won’t be able to use the new brewer at future World AeroPress Championships – but could this change in the future? Turning to broader industry news, less than a week after confirming to the World Trade Organisation that the EUDR would be implemented in December 2024, the European Union has now proposed a one-year delay. Key industry players and stakeholders have continuously expressed major concerns about the legislation, so it appears that the EU has finally started to acknowledge them. The legislation will have significant ramifications for the production and trade of coffee around the world when it does come into effect, considering the EU consumes over a third of the world’s coffee. But while this might be a relief for some, the EUDR still seems inevitable, and when the time comes, producers, roasters, and traders will all need to be prepared. https://lnkd.in/eHryzzcQ

A recent article at Coffee Intelligence shows the latest report from the German coffee association. According to this report, more whole bean coffee has been sold in 2023. Ground coffee sales have declined. In conclusion, does this mean a shift towards higher quality consumption? Or merely more at home preparation with more affordable automated machines and home coffee grinders among a younger generation of coffee drinkers?
