Combine the soy sauce, mirin, sugar, ginger, and garlic in a small bowl. 2. Sear the beef tenderloin on all sides in a hot skillet with a little sesame oil. 3. Quickly sear the beef, aiming for a rare to medium-rare doneness. 4. Remove the beef from the heat and let it rest for a few minutes. 5. Thinly slice the beef against the grain. 6.
