*Introduction* *The latest FAO Food Security report* emphasizes the importance of #upcycling food by-products as a strategy to reduce food waste and improve sustainability in food systems. The report highlights several key points: >Economic and Environmental Benefits: Upcycling food by-products can create new revenue streams for farmers and food producers while reducing the environmental impact of food waste. >Nutritional Value: Many food by-products, such as grape pomace and fruit peels, are rich in nutrients and can be repurposed into valuable food ingredients1. >Innovative Solutions: The report encourages the development of innovative technologies and practices to efficiently upcycle food by-products, thereby contributing to food security and nutrition. *Summary of current solutions* >Landfill wasteful, expensive, and produces large amounts of heat trapping “greenhouse” gases. But it is the traditional and easiest method of disposal. >Composting has little impact to avoiding GHG, although it erroneously claims to be the key to sustainable practices. >Extraction still leaves most of the residue to be disposed of as waste. >Grappa leaves large amounts of residue, as with any other extraction process. >Oil. Even when used in combination with grappa, and tartaric acid extraction, leaves most for disposal. >Livestock feed. Grape pomace can be used as a significant component but must be supplemented with a nitrogen and carbohydrate source such as legumes or pulses. Until recently, its cost of transport made it marginally competitive. >Fermented Grape Paste. This week, team Week Without Meat attended the Bridge2Food conference in The Hague! This exciting 3-day event gathered the world's leading and most innovative alternative protein creators, all focused on finding sustainable food solutions. Our own Isabel Boerdam joined a panel to discuss how consumer perceptions of plant-based foods align with industry offerings and to address why consumers aren't adopting alternative proteins as quickly as we want to. ✅ Nicolas Schweitzer ⓥ🥓 shared the four key factors La Vie focuses on to convince consumers: taste, health, price, and branding; ✅ Laura Vimercati highlighted that while many QSRs are expanding their plant-based options, sales are unfortunately lagging behind; ✅ and Isabel Boerdam emphasized that to reach consumers, they need to be encouraged to try delicious vegetarian and plant-based dishes.
