Detroit is repurposing vacant land and abandoned spaces to expand its urban agriculture and culinary scene. Along East Warren Avenue, restaurants such as Baobab Fare are set to bring Burundian cuisine, including roasted goat and spiced coffee, to the area. In Core City, Vesper Books and Wine is transforming a historic Detroit Savings Bank branch into a new venue featuring wine, beer, and curated book selections. The city’s urban agriculture movement is supported by over 2,500 farms and gardens, facilitated by organizations like Keep Growing Detroit , which provides resources such as seeds, soil tests, and training. Many local restaurants, including Ladder 4 Wine Bar and Takoi, are integrating fresh produce from nearby urban farms into their menus. Detroit’s agricultural efforts recently advanced with the passage of an Animal Keeping Ordinance, legalizing the raising of chickens, ducks, and bees within city limits. This photo shows what a Vertical Oyster Garden (VOG) looks like after it’s been soaking in our bay for two years, compared to a VOG just about to be deployed. Look at all the oyster growth! Earlier today, my neighbors and I put out two dozen VOGs undeneath a community dock where we live. Those are in addition to the three dozen we put out two years ago. In Sarasota Bay, we not only need to reduce our watershed nutrient loads, we have to increase the assimilative capacity of our bay. One way to do that is to hang VOGs under docks and piers. If they don’t touch the bottom, then you don’t need a permit. The SBEP works with our partners to collect oyster shells from seafood restaurants, “age” the shells, and then use volunteers to construct the VOGs so that they are ready to deploy. That way, HOAs or individuals can collect them for free, and hang them (we just used rope) themselves. If you can’t hang them yourself, we have folks who will do that for you (at a minimum cost). So proud of my neighbors who helped in this deployment, which brings us to 60 VOGs. Which sounds great - until I found out we have a HOA in Sarasota that is looking to put out 600 VOGs! But that’s what the bay needs - more to be done, more quickly. #sarasotabay #oysters

What happens to cockles when they land in Leigh-on-Sea? Let’s take a deep dive into the processing journey of cockles from Osborne Bros' vessel the Mary Amelia. Once landed, the cockles are unloaded and taken to the nearby factory where they are processed which involves them being cooked for four minutes – to free the meat from the shell. The discarded shells are all recycled, while the meat then passes through a ‘bubbler’ to ensure the cockles are entirely free from sand and grit. All told, across the whole business, the Osbornes employ a workforce of 50 in season. The Osborne’s website says: “The business still offers that unique blend of nostalgia and modernity that so many of our customers have come to love.” Grandparents encouraging their grandchildren to try cockles in the Osborne’s café is one example of that blend of old and new. An experiment with popcorn cockles – dipped in breadcrumbs and deep-fried – was another. “In truth, a bit like with all seafood, you’d don’t want to overcomplicate a cockle. Sometimes it’s best just with a bit of vinegar and pepper and a nice pint.” While there are still cockle customers in the UK – and of course Spain where they are enjoyed mostly in cans– the Osbornes will continue working the Thames Estuary as the family has done since 1880, sending a van twice weekly to London’s Billingsgate Market and another round the coastal towns of Norfolk and the South West.
