Bread machine tips: Is it okay to use the whole wheat setting even though I am making white bread? Absolutely! The whole wheat setting on your bread machine is designed to handle heavier and denser doughs, which typically require a longer rise time. By using this setting for white bread, you’re allowing the dough more time to rise, which can help achieve that light and fluffy texture you’re looking for. The whole wheat setting also tends to have a longer baking time, which can contribute to the light but crunchy crust you enjoy. Just keep an eye on the dough during the initial mixing phase and adjust with water if necessary, as you would with your whole wheat recipe. Happy baking!

🌺 Piping bi-color macaron 🌺 ——————————————————— 3 tips to make succesful batch of macaron: 1. Recipe ratio Recipe ratio plays an important role in making successfull macaron. Makes sure the sugar ratio is higher than egg white to make a stable batter. 2. Macaronage Know the exact time when to stop mixing the batter. The ideal consistency of batter looks like volcano lava flow, where it is not too thick and not too runny. It takes several batches of macaron to finally notice the right consistency. Rule of a thumb: undermix resulting thick batter, overmix creates runny batter. Practice makes perfect and it’s totally worth-it. 3. Baking Macaron is so delicate even when you are going to bake these babies. First you need to know your oven as well in deciding the right temperature and time. Rotating oven is great in distributing even heat. Temperature range of baking macaron varies. Usually from 140-150 degrees celcius for 15 minutes-20 minutes or until the shell can be removed completely from silpat. And don’t forget to dry-sit the piped macaron before baking it for the nice feet. #macaron #frenchpastry #ritzcarlton #pastrylyf

Have you ever wondered how bagels are made? How about wood-fired bagels? This video will show you how to do it. To make things simple, we just used a 16-ounce pizza dough. We let it rise, then we split it in four smaller doughs. So, we'll be making 4 oz bagels, which is average weight for a store bought one. First, you need to boil some water and add some salt and baking soda. While the water gets boiling, you can get the 4 dough balls ready by making a hole in the middle and stretching it. Add salt and baking soda to your water and, once the water has boiled we can add the dough. Flip the bagel after a minute. After the bagels have been in the boiling water for a couple minutes, you can place it on a cookie sheet, brush some egg wash, and add your toppings. We used everything bagel, poppy see, sesame seed, and salt. With the residual heat, bake the bagels in the oven for 12 to 15 minutes at 425 degrees and remove. It's delicious!

Scoring of dough a crucial step in bread-making, entails delicately slicing the surface of bread dough before it undergoes the baking process. As the dough enters the oven, it experiences a rapid expansion known as "oven spring," and the act of scoring helps manage and direct this expansion. By strategically cutting the dough, bakers not only prevent unsightly cracks from forming but also facilitate proper dough expansion, resulting in beautifully textured loaves. Moreover, scoring serves as a helpful technique for under-proofed loaves, as deep cuts can encourage them to open up and develop their desired shape and texture during baking.
