Previous studies have shown that non-edible components of fruits, such as seeds, peels, pulp, and twigs, which are often discarded during the processing and conditioning processes, possess a higher concentration of bioactive compounds compared to the edible portions. This chapter offers a comprehensive insight into the utilization of such non-edible fruit constituents to produce bioactive phytochemicals along with their industrial applications and future prospects. It enlists a wide range of bioactive compounds that can be extracted from the by-products of commonly processed fruits such as apple, bananas, berries and citrus fruits while providing a detailed review of the previously researched conventional and novel methodologies adopted for such purposes.
