When we go big and delicate at the same time. Those are our rare moments in #finewine, when we can open a mathusalem type of bottle and share it with family and friends. Admittedly it’s isn’t easy to pour and if it’s a top bottle that needs decanting, we better be extra careful when serving. A situation I personally love for at least 3 reasons: 1. The #ritual: opening a grand top #bottle is something rare and a process which is artistic on its own. The weight, the cork size, the endless wine flowing from it, it’s all special. 2. It usually means there’s a big group of people we love or a special event, a party, a birthday, a wedding, something to celebrate and justify opening a very large bottle. But we can also do it for our enjoyment of life and good wine of course, and that also gives us a good reason to rejoice. 3. In most cases a large format is better for aging a great wine, and enables to age it longer, unveiling secondary aromas over time. And when we collected it since a while, there’s a high chance we only have one of those and kept it for a long time to open it at the right moment. That liberation of the wait is part of our process of discovery and enjoying it. It’s the ultimate wine sharing experience, and a lot of fun. Not a bad way to start our weekend, isn’t it? WineChain

As we are all about to take off for the long weekend, consider celebrating all things local. Here are some ideas: 1. Go to a local farmers market to get your food. Local produce and meats are so much better than what you get at the store 2. Go to a local winery to grab the best bottle(s) of VQA wine to pair with the food you just purchased. Did you know that the food we grow locally tends to pair well with the local wine that is grown and made near by? www.winecountryontario.ca #100milediet 3. Seek out local arts and culture. In Niagara we have so many options, like the Shaw Festival 4. Go to a local restaurant or coffee shop. These small businesses are using the local ingredients mentioned above and carrying local wines and craft beers etc. One of my fav's is the Garrison House in Niagara on the Lake.... but trust me there are thousands of options. 5. Look for a local festival or event. This weekend is Canal days in Port Colborne. Rotary Rib Fest in St. Catharines is also a lot of fun if you need your fill of smoked meat. Live music is usually at all of these events. 6. Most of all Support Local. We are a world class region/country with so many local offerings. Lastly, do all of this responsibly. Be safe and have a great weekend!

Top Morgon Beaujolais: There is an unusual duality to a glass of Côte du Py, and with a simple whiff you’ll notice it: fruity yet savory, floral yet fierce, serious yet playful. Even semi-carbonic maceration — that unusual Beaujolais winemaking process that often smothers the orchestra of Gamay with pop music — can’t distort the brooding soul of this singular hill. So clear are these hallmarks, that not only has the Côte du Py long been seen as Morgon’s grandest vineyard, but it has come to define what we think Morgon is. At the foothill of the Cote du Py, there is the plot "Les Grands Cras", a terroir composed of blue granite in decomposition able to produce wines with a great complexity with and age-worthy difference. By plunging my gaze into the organic I show how Man, who is at the heart of this transformation, reveals its cosmic dimension. I go back in time to capture the DNA of these iconic wines in the early days of their birth. These wines are rare, sometimes almost impossible to find, and some of the winegrowers who produce them are considered Stars.
