Most of #Restaurants #Bankruptcy are in the #Fullservice #Highclass #Category . #Menu complexity leads to higher #Sourcing and #Storing of products =Cold / Freezer & Ambiant storage space needed=Space that doesn't generate direct sales. Large menu requires #Staff for Preprations and Misenplace that is #Workhours even before opening your restaurant -Operating hours . #Fullservice menu requires back of house and front of house staff =High labor cost. It also required large restaurant space including a large back of house kitchen. Higher initial investment. I remember initiating a fast casual concept that has 10 items on the menu and this concept was the most profitable concept between more than 12 concepts in our group at the time . Install a counter or a designated table as the landing area for dishes. Ensure it is sturdy and easy to clean. Heat Lamps or Warming Drawers: 5.
