Some she-cattle produce milk in such abundance that after suckling their young-ones a large quantity of it is left to make excellent human food.

Day 27 of Ferg’s Harvest Diary: We’re still going strong, and it’s definitely dig-deep time. Today, we’ve got Chardonnay coming in from Springfield—good sugars, and while the acids are a bit high, the malic levels are above average. I’m confident we can bring them on spec using cultured malolactic fermentation (MLF) bacteria. Despite the name, MLF isn’t really a fermentation but a conversion process where sharp malic acid (like in green apples) is turned into softer lactic acid (think milk), giving the wine a rounder, more balanced profile. There’s about 100 tonnes left to pick, and while this has been a long and tough harvest, the extra hang time has driven up sugar levels and added complexity to the fruit. We’re aiming to finish within the next week—apart from the Albariño, which didn’t come in until mid-November last year.
