When the "jun" of junmai is interpreted as "pure", it seems to flick a switch in the brain that persuades some people it's somehow more "natural" or "better". ⠀⠀ 🍶⠀⠀ This doesn't really make sense, as the fermentation and distillation processes that make distilled alcohol are themselves natural. Some breweries even distill their own sake to produce the alcohol they add before pressing, so bar some evaporation there's no difference whatsoever.⠀⠀ 🍶⠀⠀ You may notice some sake, especially the kind in waxed cartons, that advertises itself as something like "o-kome dake no sake" (お米だけの酒), sake made from rice only. So, is it junmai? ⠀⠀ 🍶⠀⠀ Not necessarily, and by law it must have a disclaimer stating when it's not! It's usually in tiny font somewhere on the packaging near the name or claim. Some of these inexpensive sake fail to meet the other requirements - they may not be made from rice of a certain quality, or may not have the required ratio of rice with kōji to rice without. So they're trying to evoke that "natural" glow while actually not being of the same quality as a real junmai.⠀⠀ 🍶⠀⠀ #discoversake #sake #nihonshu

So how does the mineral content of water affect sake?⠀⠀⠀ 🍶⠀⠀⠀ Through its effect on yeast! These tiny microbes that turn sugar into alcohol–and produce aroma compounds–thrive on small quantities of some minerals.⠀⠀⠀ 🍶⠀⠀⠀ Water with magnesium, potassium and phosphorus makes yeast more active. These minerals are not reflected in "water hardness" as such, as it only takes calcium into account, but high levels of calcium are often found together with high levels of magnesium.⠀⠀⠀ 🍶⠀⠀⠀ Does that mean that water with low mineral content can't be used to brew sake? Not at all, as the breweries in Hiroshima–home of the 'ginjo' style of long, low-temperature fermentation–prove. Rice contains enough of the necessary minerals to nourish the yeast, and breweries also have the option of adding minerals to their brewing water or just to the starter if needed.⠀⠀⠀ 🍶⠀⠀⠀ #discoversake #sake #nihonshu
