The Chicago restaurants Bazaar Meat and Bar Mar represent an innovative partnership between fine dining visionary and humanitarian José Andrés' José Andrés Group and Gibsons Restaurant Group (GRG), the local operator that has been shaping the city’s dining landscape for over 30 years. Since Steve Lombardo and his partner opened the Chicago institution Gibsons Steakhouse in 1989, GRG has grown to operate 13 restaurants in three states, including some of the country’s highest-grossing restaurants.
