🥬#Vegan Made Easy with Joy and Meal! For Qwello's year-end celebration, the team of 10 opted for something fun, interactive, and delicious - a fully vegan cooking class led by Chef Wendy. Qwello is a Munich-based forward-thinking #startup specializing in electric vehicle (EV) charging infrastructure across Europe. They are on a mission to make urban mobility cleaner, smarter, and more accessible, supporting a sustainable future. Set in JAM’s casual, no-frills cooking studio, the 4-h session featured a specially curated 3-course vegan menu. Chef Wendy welcomed the team with a festive Christmas Wreath Salad, swapping traditional mozzarella for handcrafted tofu balls, paired with creamy hummus and crispy bruschetta to kick things off. The participants rolled up their sleeves and got hands-on, learning to: 1. Shape and fold vegan gyoza: starting with preparing a flavorful filling, carefully folding the dumplings, pan-frying them to golden perfection, and creating a savory dipping sauce. 2. Craft a hearty vegan #ramen: chopping & cooking ingredients as the toppings, simmering a plant-based broth, and experimenting with various condiments to create a delicious base sauce. They finished by plating their ramen bowls like pros before diving in for a well-earned slurp! 3. Enjoy a refreshing dessert: the class wrapped up on a sweet note with Chilled Chia Pudding, topped with caramelized coconut sugar and fresh mango. The team not only learned new culinary skills but also discovered how achievable and satisfying a vegan menu can be. This celebration proved that good food, no matter the dietary preferences - is about creativity, passion, and a little #teamwork! At Joy and Meal, every client’s request is an opportunity to customize and deliver something exceptional, proving once again that vegan cooking is as delicious as it is doable! SPEED READING MENUS IS THE VEGAN/GF PERSON'S SPECIALTY People who are vegan and gluten free have become extremely good at speed reading menus over the years to see if we'll be dining at your establishment. Whether it be a restaurant, or even choosing the hotel they stay at based on the dining options. What we search for when speed reading: labels such as V = Vegan, GF = Gluten Friendly, VG = Vegetarian scattered throughout the menu. We like labels! We also look for a separate vegan section on the menu if there are no labels. A separate vegan menu is also a great idea if you don't want to re-print your entire menu. If you go this route, just make sure to upload your separate vegan menu to your website so that people know there are options for them. No mention of any of these things? We won't be coming because we don't know what we'll be able to have, if anything. Want to know how vegan friendly your business is? Let's schedule a free 30 minute consult! https://lnkd.in/esDiYzGm

2024's Hottest Culinary Trends: What's Cooking in the Kitchen... Part I As we venture into 2024, the culinary world continues to evolve, embracing new flavors, techniques, and philosophies. As a professional chef, or a restaurant owner, or a food enthusiast, staying abreast of these trends can help us to innovate and delight your guests. 1. Hyper-Local Sourcing: Hyper-local sourcing takes the farm-to-table concept a step further, emphasizing ingredients sourced from nearby farms, urban gardens, and even on-site hotel gardens 2. Plant-Based and Flexitarian Diets: Plant-based diets continue to gain popularity, with more people identifying as flexitarians – those who primarily eat plant-based but occasionally consume meat. 3. Sustainable Seafood: Chefs are turning to responsibly sourced fish and shellfish, promoting lesser-known species that are abundant and sustainable, such as mackerel, sardines, and arctic char. 4. Nostalgic Comfort Foods: Nostalgic dishes, reimagined with modern twists, are making a comeback. Think gourmet takes on childhood favorites like mac and cheese, meatloaf, and chicken pot pie, but with high-quality ingredients and sophisticated presentation. 5. Functional Foods and Beverages: Health and wellness remain a priority for many, leading to an increased demand for functional foods and beverages. Ingredients like adaptogens, probiotics, and superfoods are being incorporated into meals and drinks to enhance health benefits. #cheflife #cookingpassion #healthyfood #food #culinary #kitchen #culinartrends #hotels #restaurants #Chef

🥕 I recently spoke with Joe Yonan, food editor of The Washington Post, about his new book Mastering the Art of Plant-Based Cooking. We discuss viewing vegan as a cuisine rather than a political statement, and separating the culinary from the labels. #plantbased #vegan #foodpodcast

The culinary world is all about innovation and change. Back in the '90s, 'vegan' and 'vegetarian' were practically dirty words in the kitchen. For many chefs, including myself, these terms felt like the guests' way of saying, "Let's see how creative you really are." It took a lot of effort to make these dishes exciting. But now, veganism is playing a starring role in our kitchens, and we chefs are embracing it with open arms. In fact, we're starting to love it because it gives our creativity a real workout. At Oishii Bun, we whip up a bun with smoked celeriac and kimchi, which was crowned the best snack in the Netherlands. Over at the Culitainment Group, we're taking dishes like dal, vegan pad Thai, and ratatouille to new culinary heights. Isn't it amazing, these changes? Though I must confess, I still have a soft spot for a well-prepared veal cheek with a sprinkle of truffle to give it that vegan twist 😉. #vegan #vegetarian #sustainable
