The pineapple earned its reputation as a “royalty fruit” due to its historical association with wealth, luxury, and status. In the colonial era, pineapples were extremely rare and difficult to cultivate, especially outside of tropical regions. This rarity made them a symbol of affluence and privilege. Pineapple owes its regal allure to its crown-like tuft of leaves and golden color, Over time, as cultivation techniques improved, pineapple became more widely available and its status as a luxury fruit diminished. However, the association of the fruit with royalty and richness remains part of its historical legacy. Do you know how does matcha produced? We use the same material of tea which you familiar with. But quite different method while we are planting and producing. The green colour is very important for matcha. We prefer it to have dark green. So shading is the most common way to have the colour we want. We call the material we use as Tencha. You may regard it as tea fanning. Quite similar, but also different. Fanning can be divided into steamed and fired. But Tencha is steamed. And for powder, we prefer it could be more fine. We have very efficient machines and we are also using very traditional way--the stone for very high grade one. But don't forget one thing, no matter how fine the powder is, it is still can't dissolve in water. The story of Gesha is a remarkable one. According to World Coffee Research, this highly sought-after variety was initially found in the forests of Ethiopia in the 1930s. From there, it was sent to research institutes in Tanzania, Kenya, and Costa Rica before making its way to Panama in the 1960s. Since then, the country has become synonymous with Gesha, largely thanks to high-end auctions like Best of Panama (BoP) and World Coffee Championships such as the World Barista Championship. At auctions like BoP, washed Geshas have their own category, with natural Geshas and other varieties competing in separate categories. All categories perform well on the scoresheet and receive high prices. Gesha’s exceptional cup quality and floral characteristics are often best highlighted by washed processing methods. In turn, washed Geshas tend to perform well at auctions like BoP. There is, however, plenty of potential for diversity within Gesha, particularly in ongoing innovation in processing. In recent years, Panamanian producers have been experimenting with different techniques to create entirely new flavour profiles for Gesha without compromising its inherent cup characteristics. 🏔️ Tea “grown at 600m elevation” can mean very different things based on greater geographical context! 🏔️ Many focus on elevation as an automatic quality indicator for tea, but latitude and elevation are tandem factors in a tea’s macro terroir. Latitude and elevation produce similar effects; the further north, or higher up, a tea grows, the colder its growing environment tends to be. Elevation can’t be understood independently from latitude. For instance, a tea growing at 600m in Yun Nan means it’s growing in a balmy, tropical, nearly-flat environment—not great for tea. But further north, in a place like Lu An, 600m is cold and mountainous, and makes for quite impressive tea! In fact, Lu An teas at 600m are ready for harvest nearly a month later than Yun Nan teas at 1500m due to the colder climate of Lu An.
