On this day in science Stephen Moulton Babcock was born He developed thst Babcock Test for determining the butterfat in milk. For the most part, the Babcock test was used by farmers to check the quality of their milk. Sometimes, it was also used to make sure that dairy farmers weren't diluting their product to stretch the amount of milk they had. The test became incredibly popular and was the primary method for testing milk fat for decades. The test is based on the observation that a suitable amount of sulfuric acid added to the milk will dissolve proteins and other components, except the fat. Heating and centrifuging cause the fat to separate and float to the top, in a layer free of bubbles. The amount of fat in the milk can then be estimated from the volume of that layer.
