How many of your favorite wines were aged in oak barrels? While the barrel seems like a simple vessel for wine aging, there’s a lot more to choosing the right barrel and barrel-aging than you would expect. Learn about all the factors that go into barrel-aging wine and why we use oak barrels for our Cypress Ranch Cabernet Sauvignon and Howell Mountain Cabernet Sauvignon. https://bit.ly/3JObRgW

I found using flowcharts to understand the sequence, winemaking options, unique or common patterns across each of the D5 fortified wines: Sherry, Port, Madeira, VDN and Rutherglen Muscat helps with memory recall and review. I have also included key wines styles as a result of these winemaking flows. Check them out, I hope it helps! https://lnkd.in/gY6fWShp #wsetdiploma #wsetdiplomaunit5

The development process for our Larus barrels was originally aimed at creating a barrel that was specifically suited to short-aged white wines, while minimizing barrel taint, but still providing all the benefits of the new barrel use for the wine. The result? Not only perfectly suited to white wines, but also produces excellent results with low tannin, moderate alcohol reds like Pinot Noir and Kadarka. The global success of Larus barrels proves that this particular type of barrel adapts extremely well to different wine styles and works particularly well for Pinot Noir producers. In this way, Larus barrels help to preserve the delicate aromas and elegance of the wines, while adding a little extra complexity and structure without overpowering the natural character of the wine. With Larus barrels, Pinot Noir can be taken to a new level. PURE-LEES™ is a new range of specific inactivated yeasts developed and produced from an innovative process called High Pressure Homogenization (HPH™). This mechanical process leads to the disruption of wine yeast cells to maximize the interaction capacity of yeast constituents with the wine matrix. When PURE-LEES DELICACY™ is applied towards the end of the alcoholic fermentation, you get a smooth, balanced texture which improves the red wine quality without modifying the wine structure. Ideally suited for lighter style reds. Additionally, when PURE-LEES ELEGANCY™ is used towards the end of alcoholic fermentation, it allows for the interaction with aggressive tannins which leads to the overall improvement of the wine texture and quality, resulting in a well-balanced red wine with enhanced structure. PURE-LEES ELEGANCY™ is ideally suited for fuller structured red wines. Try it!
🍷 Improve your red wine texture before bottling ! Ensure fast action in just a few days of contact time with our specific inactivated yeasts ! • PURE-LEES DELICACY™ rebalances the mouthfeel of your easy to drink fruity red wines from Pinot noir or Gamay (https://ow.ly/c7TA50UfCEt) • PURE-LEES ELEGANCY™ improves the texture and smoothens the tannins of your concentrated red wines, from Syrah, Cabernet or Malbec (https://ow.ly/hlNj50UfCET) Achieve the wine style you want with PURE-LEES DELICACY™ and PURE-LEES ELEGANCY™.

The Endless Pursuit of Perfection in Winemaking For every idyllic moment you see of Team Di Costanzo amongst the vines or working in the winery, there are countless others filled with uncertainty and the nagging feeling we could have done better with a particular wine. ❓But do you want to know the frustrating, shake-your-head-and-quietly-laugh-to-yourself thing about that? ☑️ It means we're doing it right. The best winemakers we know, the women and men whose work we admire so much, are all the same. We are never satisfied with our work. There's never a sense of being done, or having nailed a vintage or even one particular wine. Even many years after those grapes were picked and crushed into wine, often we still question what we might have done to make that wine better. It's downright torture! A relentless journey without a final destination. 🤪 While we don't revel in this torment, understand that when you buy from an independent, winemaker-owned winery like ours, you're tasting the fruits of our unwavering determination to improve constantly. It's a lifelong pursuit of perfection in every bottle.

In this piece for Business Insider, I share the five best states in the US for wine tasting. Believe it or not, all 50 states grow grapes — even in cold and snowy places like Alaska and Vermont and tropical spots like Florida and Hawaii. I'm a certified sommelier (as you know), and there are five states I always recommend if you're looking for the best wine, wineries, and wine-tasting experiences. https://lnkd.in/gZ-HzskK

How does cellar climate affect the barrel-aged wine? ‣‣‣ The barrels gradually transfer the aromatic and flavour components, making the wine richer and more complex. The cellar's climate fundamentally influences the characteristics of the barrel-aged wines. Cooler temperatures and higher humidity can result in fresher and cleaner wines, while too high temperatures, for example, can accelerate the ageing process, which can cause the wine to age more quickly. That is why precise temperature and humidity control is important, not just choosing the right barrel. Hi everyone - this week, let's travel further east of Napa and turn our attention to one of the smaller sub-AVAs: Wild Horse Valley. If you've never heard of Wild Horse Valley, it's because there aren't a lot of wines made there. Sitting above the fog line, this is the coolest of all the AVAs and benefits from its proximity to San Pablo Bay. Pinot Noir and Chardonnay do well, and tend to have higher acidity do to the higher elevation. The fruit is mainly sold to other wineries. Situated on the edge of this AVA, Kenzo, is the closest winery that I can recommend - with a caveat. Pre-2020 wines from Kenzo were made by "the first lady of wine" Heidi Barrett. Those wines were fantastic. Unfortunately, per Wine Searcher, Heidi left Kenzo in 2022 over a dispute with the owners over releasing their 2020 reds, which she felt may have been impacted by smoke from the Glass fire. She wanted to make it clear that she did not make those wines. Marc Nanes, was Heidi's assistant and has taken over winemaking duties. Hopefully, he can continue their legacy of great wines. Insider Tip: If you see 2020 Napa reds on store shelves it's best to steer clear unless you can ensure the grapes were harvested before the Glass fire on Sept 27th, or they weren't subjected to the smoke. #wealthandwine #financeandvino #financialadvisor
