Better plant-based egg on its way. In an innovation project, a new plant-based scrambled egg formulation is being developed. As is in Brannatura’s DNA, we not only try to improve the functional characteristics of the formulation (such as texture, taste, frying and scrambling behaviour) compared to products existing in the market, but we also focus on obtaining a product that is as nutritious and clean-label as possible. Starting with a meeting with our great partners Erhvervsakademi Aarhus | Business Academy Aarhus, Crispy Food A/S and InnovaConsult to coordinate the project, we are now in the process of designing and testing formulations, which come closer and closer to the final goal. The project has obtained funding from the Innovationskraft program, which is financed by the European Union and Danmarks Erhvervsfremmebestyrelse through Food & Bio Cluster Denmark. Through Innovationskraft, Food & Bio Cluster Denmark wants to strengthen cooperation and knowledge transfer between companies, knowledge institutions and other players.
