A study by University of Illinois Urbana-Champaign explored how increasing pork carcass weights influence carcass characteristics and yields using both traditional and alternative fabrication methods. The findings showed that while heavier carcasses resulted in heavier cuts overall, the percentage distribution of carcass weight remained largely unchanged. The study also identified potential for novel retail cuts, particularly from the shoulder muscles (serratus ventralis and triceps brachii), which showed significant weight increases in heavier carcasses. These results suggest opportunities for new retail offerings as pork carcass weights continue to rise. in the industry.
