On October 27, the FAACT Florida - French American Association of Crafts & Trades - Florida Chapter and online magazine French Morning USA held their annual competition at the National Hotel in Miami Beach to name the state’s best French baked goods. Ficelle Bakery, a family-owned shop located at River Landing on the Miami River, emerged victorious, winning both Best Baguette and Best Croissant in Florida. Founded just three years ago by Olivier Rizk and his two brothers, the family-owned bakery has quickly risen to the top of the local scene with its dedication to authentic French techniques and ingredients. For Rizk, a Haitian-American baker who grew up in Miami, the win marks an emotional and professional high. At 32 years old, he brings more than a decade of experience to his craft. Starting his career under his uncle’s wing at Delices de France in Palmetto Bay, Rizk honed his craft at New York’s Maison Kayser, where he won the title of Best Baguette in New York City in 2019. Bread pasta | bread marmite | Yeast | perigold truffle 🥖🥖🥖🥖 To address bread wastage in our kitchen, particularly with imperfect homemade sourdough loaves, we embarked on a journey of experimentation. After numerous trials, we devised a dish primarily crafted from leftover bread. Our process involves boiling the old bread until dehydrated, then straining and blending it into a paste. Additional flour is incorporated until achieving a pasta dough consistency, which is then shaped into cavatelli. Accompanying this creation is a sour umami paste dubbed “bread marmite,” crafted from fermented old bread. The pasta sauce is a delicate emulsion of butter and yeast. For a luxurious touch, each dish is crowned with a hint of extravagance: Perigold truffles offering a delightful contrast to this humble yet innovative bread-inspired fare. Jan Horak

Roll out the dough and begin the folding process (usually using single folds). This method creates a more uniform and controlled lamination of the dough. The English method is great for recipes like puff pastry, where precise layers are essential. Scotch Method (also called the Blitz Method): The Scotch method is faster and less precise but still effective: 1. The butter is cut into small pieces and mixed directly into the dough, rather than being encased separately. 2. Once the butter is in the dough, it is rolled out and folded similarly to the English method. 3. Fold the dough as required to create layers. The Scotch method is more rustic and less refined, typically producing fewer distinct layers than the English method. It's often used for recipes where you still want some flakiness but don’t need the same level of precision, such as quick puff pastry or rough puff. Summary: English method: Butter is fully encased within the dough and then laminated. Scotch method: Butter is incorporated into the dough in chunks and then laminated. Our association, the first French American Association dedicated to Artisans and Entrepreneurs FAACT Florida - French American Association of Crafts & Trades - Florida Chapter is a nonprofit organization. We volunteer our time for this competition, which involves four months of preparation. We carefully select the candidates and invite judges from all over the United States. A huge congratulations to Ficelle Bakery , who will have the honor of traveling to France in Paris next May to participate in the Fête du Pain on the forecourt of Notre-Dame, an event organized by the Syndicat des Boulangers-Pâtissiers du Grand Paris.🙌🥖🥐
